The Brussels waffle has a fascinating history that goes back centuries. Originally from Brussels, it has become one of the emblematic symbols of Brussels cuisine.
The first mentions of the Brussels waffle date back to the Middle Ages, when it was often eaten on special occasions and religious holidays. At the time, waffle irons were simple cast iron plates to be put on fires. Waffles were made with a dough made from flour, eggs, and milk. Over time, new ingredients have been added to give it a crispy and light texture.
Today, waffles are enjoyed all over the world, but often in a modified form where they have lost their original taste. WAW invites you to rediscover the real waffle, the one from Brussels.
The story behind the scene
Our chef was born in Brussels. Like all children in Brussels, he loved to eat Brussels waffles in the small streets of his city. After being an artist and a jeweler, he decided in 2021 to leave Europe and come and settle in this country he loves: Thailand.

Glad to see that on every street corner in the City of Angels, there are waffle vendors. Only, he didn't find the taste and texture of the Brussels waffles of his childhood, crispy and light.
​
He then decided to introduce Thais to the taste of the real waffle of his hometown, the city where the waffle was invented and improved before it was exported all over the world.
